Small Air Fryer For Baking Banana Bread
The mini air fryer we use in our RV is the 2 quart Instant Vortex 4-in-1 Air Fryer (click to view on Amazon).
The pan we use that fits perfectly inside is the Fat Daddio’s 5×2 Round Cake Pan (click to view on Amazon).
The cooking tray in a mini air fryer is so small that a rectangle loaf pan would have to be tiny to fit inside but a mini loaf pan that’s under 6.5 inches in total length like this one (click to view on Amazon) should work.
Since I have very limited storage space in my tiny motorhome I just use the round cake pan for everything but I thought I’d mention another option.

Mini Air Fryer Banana Bread Recipe
Moist Banana Bread For Small Air Fryers
Equipment
- Small Air Fryer
- Mini Cake Pan or Bread Tin
Ingredients
- 1/4 cup Butter
- 1/2 cup Sugar
- 1 Egg
- 1/2 teaspoon Vanilla Extract
- 3/4 cup Flour
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/4 cup Sour Cream
- 1 Banana
Optional
- 1/4 cup Walnuts
Instructions
- Melt butter in microwave, put in medium sized mixing bowl, and add sugar. Mix until butter has cooled to room temperature.
- Add egg, vanilla extract, flour, baking soda, and salt. Mix until smooth.
- In a separate bowl mash banana with fork and combine with sour cream. Add walnuts if desired.
- Add banana mixture to main batter. Slowly mix or fold together until combined but not totally smooth.
- Grease pan with butter.
- Fill pan with bread batter about 1/4-1/2 way full. Do not fill past 1/2 line as bread will raise a lot during baking.
- Set air fryer to 325F.
- Bake for 20 minutes or until an inserted toothpick comes out clean.
- Bake time may vary slightly depending on what kind of pan is used.
- Let cool for at least 10 minutes before removing bread from pan.

How To Make Banana Bread In A Small Air Fryer
This is hands down the easiest and most fool proof banana bread recipe ever. The small amount of sour cream makes it so the bread will be moist and it really brings out the banana flavor.
Don’t worry, there are no sour cream flavors in the final result. Once combined with everything else and baked the only thing it does is add moisture but there’s no sour taste at all.
To start you will need to melt your butter and combine it with the sugar.
One thing to be careful of is making sure the butter has cooled down to room temperature before adding your egg.
If it’s still hot the butter will cook the egg a little and give you scrambled eggs in your banana bread.

I cool the butter by mixing it with the sugar for a few minutes. This not only cools the butter fast but it helps break down the sugar particles which results in a more tasty bread.
Once the butter is cool it’s time to add your egg, vanilla extract, flour, baking soda, and salt.
You can pretty much just dump it all in and mix it up.
Mix until everything is fully blended together to make a smooth batter.
Now it’s time to start the banana part.
In a separate bowl take your banana and mash it up with a fork. Then add your sour cream and walnuts if you want them.

Once the banana and sour cream are mixed together fairly well it’s time to add it to the main batter.
It’s totally fine if there are still some big banana chunks, that will only make the final bread even better.
Now for the slightly more technical part.
You don’t want to over mix the banana with the main batter because you want there to be banana chunks still left when you’re done combining everything.
When you mix them together, use a large folding motion to gently mix the batter with the banana mixture.
Mix it together until everything is combined, but the final batter isn’t smooth.
Now it’s time to lightly grease the pan with butter and add some batter to it.
Do not add all of the batter to the pan even though it will fit.
The bread will rise a lot when cooking and if you add it all it will rise into the heater part of your mini air fryer and cause some burning and possibly even some damage.
Only use half of the batter, it will fill the round cake pan a little more than 1/4 of the way.

Set your air fryer to 325F on bake or air fry mode.
Bake for 20 minutes or until an inserted toothpick comes out clean.
If you are using a mini bread loaf pan it may take slightly longer to bake.
The top of the banana bread should be lightly brown. You can see in the picture above that the center has risen to almost the top of the pan. That’s why I make two small loaves instead of one big one.
Remove the pan from the small air fryer and let cool for 10 minutes.
You can now flip the cake pan to remove the banana bread.

You can now enjoy a slice of warm banana bread or let it cool completely before digging in.
Banana bread is one of those desserts that always tastes better the next day but this recipe will be moist and delicious even when it’s still warm out of the oven.
