I just made a pie one day and put the leftover pie filling in the fridge, then made another pumpkin pie the next day.
I always pre-cook my pie crusts. In a small air fryer, this step is especially important because it gets so hot inside. It doesn’t take long to cook the filling and if you don’t pre-cook the pie crust it may be raw in the bottom still.
Once you have your pie crust in your small air fryer cake pan or pie tin set the air fryer to 300F.
Put tin foil and some sort of weight inside the pie crust. This will stop the bottom of the pie crust from forming a bubble and help the outside of the crust from browning too soon.

Most people use beans as a pie crust weight but I used a small oven safe sauce bowl because it’s all I had.
Bake in your small air fryer for 5 minutes at 300F. Then remove the tin foil and center weight and cook another 3 minutes at 300F.
Once baked, poke holes in the bottom of the pie crust using a fork. It’s ok if the pie crust isn’t fully cooked yet. It will cook more once you’ve added the pumpkin pie filling.
While the pie crust is pre-baking in your small air fryer you can prepare the pie filling.

In a large bowl combine the egg, pumpkin pie puree, and spice mixture.
Add evaporated milk by slowly pouring it in while mixing.

While baking in the small air fryer the pumpkin pie filling will raise. You want to leave about 1/4 inch of space from the top of the pie crust so the filling doesn’t overflow.
A normal pumpkin pie can take up to an hour to bake but this pumpkin pie is about 1/4 the size of a regular pie and it’s being cooked in an extremely efficient small air fryer, so it takes a lot less time.
Set your mini air fryer to 350F and bake for 20 minutes.
To check if the pumpkin pie is fully cooked insert a knife for toothpick into the center. If it’s clean when removed the pie is done. If the center is still liquid bake the pie for another 5 minutes.
